More with Less

Many of you have asked what we are going to eat while in Namibia. We have watched several documentaries on the San people and they eat all kinds of things from porcupine, berries and nuts, beetles, and wild game. I am sure we will be able to try all these things. Part of being on a TIMO team is a simpler lifestyle. We will definitely have limited choices in what we can buy to eat and it should be a learning experience to grow crops on the edge of a desert. We will be able to answer this question better when we get there.

For the past few years, one of my New Year resolutions has been to try cooking something new each month. Some months we find a new favorite and other months it is interesting. Jeremy and I bought a cookbook during our time at AIM headquarters in April titled More with Less by Doris Janzen Longacre. It is a world community cookbook. I know everyone is learning to live on tighter budgets these days, so simple recipes can help. I would like to share my monthly cooking experience with you all. So here is one of the recipes we have tried and liked.

Six-Layer Dish

Serves 4

Layer in order given in a 2 quart greased casserole dish, seasoning each layer with salt and pepper.

2 medium potatoes, sliced100_2528

2 medium carrots, sliced

1/3 cup uncooked rice

2 small onions, sliced

 1 lb. ground beef

 1 qt. canned tomatoes

Sprinkle over: 1 T brown sugar

Bake at 300 degrees for 2.5-3 hours.

My twist to the recipe is using black beans instead of beef. I have several vegetarian friends, so I try no meat meals often. Plus, beans are cheaper that meat. Enjoy.
